Talking of treats, here’s a real tasty cake that Moon Bingo’s own Sophie brought into the office today – her very own Bailey’s Bundt Cake! This cake was so delicious we just had to share the recipe here with you. WTG, Sophie! Enjoy, roomies…we here at Moon Bingo wish you the best of luck!
Sophie’s Bailey’s Bundt Cake
Directions:
1.Preheat oven to 160 degrees. Grease and flour an angel food cake pan and sprinkle the chopped pecans evenly in the bottom and set aside.
2. In a large mixing bowl, combine cake mix and vanilla pudding mix.
3.Add the eggs, 1/4 cup water, vegetable oil and 3/4 cup liqueur. Mix on high for 2 minutes. Pour batter into the prepared pan, on top of the nuts.
4.Bake in the preheated oven for 1 hour, until toothpick inserted in the center comes out clean.
5. Cool for 10 minutes in the pan. While cake is cooling, make the glaze. In a small saucepan, combine the butter, 1/4 cup water, sugar and salt and bring to a boil.
6.Boil and stir constantly for 5 minutes. Remove from heat and stir in 1/4 cup of liqueur.
7.After cake has cooled for 10 minutes, gently remove from and pan and place on a serving platter, pecan side down.
8.Poke holes all over the top of the cake with a fork and spoon half the glaze all over the top and sides of the cake, allow it to absorb and then spoon the second half of the glaze. Serves 10-12.

Ingredients
1 c. plain yogurt
1 tsp. nutmeg
1/2 c. vegetable oil
1/2 c. honey
1/8 c. extra fine, ground coffee, sift some
3/4 tsp. salt
2 1/4 c. whole wheat flour
2 1/4 tsp. cinnamon
1 1/8 tsp. soda
Middle Filling
1/2 cup chopped walnuts
1 Tbsp cinnamon
1 tbsp brown sugar
Topping
3/4 c. honey
3/8 c. melted butter
1/2 c. poppy seeds
5/8 c. raisins
3/4 cup chopped walnuts
Directions
Use 2 bowls, one for dry ingredients and one for wet ingredients.
Stir each bowl of ingredients, and then mix together.
Pour half batter in a bundt pan. Sprinkle the Middle Filling ingredients, then pour remaining batter on top
Bake at 175°C for 45 minutes.
After 35 minutes remove and top with topping and return to bake another 10 minutes.

1 egg
2 Tbsp. cocoa
14 “mini” peanut butter cups
Directions:
1. Preheat oven to 350 degrees; grease a non-stick cookie sheet.
2. Place sugar, creamy peanut butter and egg into a bowl.Mix until you get a creamy dough.
3. Remove 1/2 cup of dough and place into another bowl; add the cocoa. Mix until combined.
4. Place one “mini” peanut butter cup on top.
5. Wrap the dough around the peanut butter cup to form a ball.
6. Continue to roll all the balls then set aside.
7. Take about a tablespoon of peanut butter dough and flatten it in the palm of your hand. Place a chocolate ball in the center.
8. Wrap the chocolate ball up with the dough until completely covered.
9. Place onto the greased cookie sheet. Repeat with remaining dough.
10. Bake in preheated oven for 10-12 minutes; until golden brown. Allow to cool for 2 minutes before removing from the cookie sheet.

125g butter, softened
1/3 cup caster sugar
1/2 teaspoon vanilla essence
1 egg yolk
1 1/4 cups plain flour, sifted
5 tablespoons raspberry jam
Instructions
1. Preheat oven to 180°C. Grease 2 baking trays. Line with baking paper.
2. Using an electric mixer, beat butter, sugar and vanilla until light and fluffy.
3. Add egg yolk. Beat to combine. Add flour. Stir to combine.
4. Roll 2 tablespoons of mixture into a ball. Repeat with remaining mixture to make 10 balls.
5. Place balls 10cm apart on trays. Using the palm of your hand, flatten each ball to form a 7cm round, shaping edges to remove any cracks.
6. Gently press a 5cm heart-shaped cutter into the centre of each round, being careful not to cut the whole way through. Using the tip of a small knife, scoop out the dough to make a heartshaped indentation. Gently smooth indentation.
7. Fill each heart with 2 teaspoons jam, spreading out to edges.
8. Bake for 15 to 20 minutes or until light golden. Cool on trays. Serve.

Irish Coffee Hot Chocolate
*If you wan to make this recipe even easier, simply substitute Bailey’s Irish Cream for whiskey! Just be careful how much you add…with the chocolate it may be a little too sweet for some bingo players!
2 cups whole milk
1/2 cup strong brewed hot coffee
3 oz. bittersweet or semisweet chocolate, chopped into small (1/4-inch) pieces
2 Tbs. Irish whiskey, more or less to taste
Whipped cream, for garnish
WHAT YOU DO:
In a small saucepan, bring the milk just to a boil over medium-high heat. Put the coffee, chocolate, and whiskey in a blender and pour in the hot milk. Let sit for 10 to 15 seconds so the chocolate begins to melt. Cover securely, place a folded towel over the blender lid, and blend until completely mixed and frothy, about 30 seconds. (Alternatively, you can use a steamer to froth the milk. Add the chocolate, coffee, and whiskey, stir until melted and well blended, and then steam the mixture again for a few seconds more).
Divide the hot chocolate between two mugs, and garnish each with a dollop of whipped cream.
SPICY BUTTERED CIDER
*If you want to make this recipie even easier, simply skip the butter and make the cider cocktail with just rum and hot mulled cider.
WHAT YOU NEED:
For the Cinnamon Butter:
4 oz butter, room temperature
1/4 tsp cinnamon
2 tblsp brown sugar
Dash of salt
For the Cider Cocktail:
1 oz rum
4.5-5 oz hot apple cider
Tab of cinnamon butter, very cold
Orange peel
WHAT YOU DO:
To make the butter: Whip the butter with a whisk until light and fluffy, for one to two minutes. Stir in the cinnamon, brown sugar, and salt. Spoon butter on a small piece of plastic wrap, wrap plastic around the butter, and twist the ends tightly, like a candy wrapper, to form a tube about three to four inches long and about one inch in diameter. Chill thoroughly.
To make the cocktail: Pour the rum into an Irish coffee mug, top with the hot cider. Remove the plastic wrap from the butter and cut a ¼- inch thick slice, add this to the top of the cider and serve. Optional addition of orange peel.
