Moon Bingo’s Xmas Turkey Treat!

Got your turkey recipe yet or are you still looking for some last minute inspiration? Well we have the easiest and most delicious Xmas Turkey Recipe you’ll find in the whole of Lapland!

See how delicious it looks? You’ll want to gobble the whole thing up before Santa’s Elves get their mits on this tasty turkey!

Here’s what you need:

1 x 5kg turkey

1 brown onion

1 bunch of fresh parsley

1 bunch of fresh thyme

1 pack of unsalted butter

3 long rashers of bacon

Olive oil

Here’s what you do:

1. Make sure your turkey is totally defrosted before you cook it. So take it out the freezer today so its all ready to cook tomorrow.

2. Xmas morning take it out the fridge so it has a few hours to get back to room temperature.

3. Place the onion, parsley and thyme in the cavity of the turkey, and rub the outside of the turkey with the butter.

4. Add some oil to your roasting dish, then line the base with the bacon and pace the turkey breast-side down on top of the bacon.

5. Cook for 20 min per kilo + for turkeys 4kg or under and extra 70 mins + for turkeys 4kg or over an extra 90 mins.

6. 30 mins before cooking time is over, turn the turkey breast-side up and remove the bacon. Gently cook for the remaining 30 mins or until skin is golden and crisp and the juice runs clear.

7. Remove from the oven, let it rest for 20-30 mins and then ENJOY!

Moon Bingo’s Festive Brownies

Hello all bingo lovers! Fairy here to wave her wand and share a fab new recipe that came flying my way recently.

Now fairy is not known for her baking skills (just ask Mr Fairy lol) but these are easy peasy and your kids can even help decorate – my fairy babies had loads of fun doing theirs (and messing up my kitchen in the process I might add!)

Ok, so here’s what you need:

3/4 cup melted butter,

1 1/4 cups sugar,

2 tsp vanilla extract,

3 eggs,

3/4 cup self-raising flour,

1/2 cup cocoa powder,

1 tub vanilla icing,

1 pkt rice crackers,

choc chips & m&m’s for decorating

Here’s what you do:

Preheat oven to 180°C.

In a bowl, beat the sugar and eggs together and light and fluffy.

Beat in the flour, melted butter, cocoa and vanilla until well combined.

Pour into lined round cake tin and bake for 25-30 minutes.

Leave to cool and slice into 8 wedges.

Place the vanilla icing in a ziplock bag and snip the corner off. Pipe the icing onto the wedges to cover the whole brownie.

Place a rice cracker into the bottom to create a tree stump.

Decorate with various decorations to your liking.
